Sole Carmelized Onions, Potatoes & Sundried Tomatoes
Dice potatoes 1/2 inch. Slice onions 1/4 inch. Place sundried tomatoes in hot water.

Heat 2Tbsp oil in pan til hot. Add onions and 2Tbsp red wine vinegar. Saute 3 minutes til softened.

Add potatoes. Cook 10minutes til done.

Onions will start to carmelize.

Pat dry Sole.

Heat pan with 2 Tbsp oil. Add Salt and pepper to Sole and pan fry for 1-2 mins each side

Mix up sundried tomatoes with 1 tsp olive oil and 1 tbsp za'atar seasoning.

Add stripped parsley. Mix.

Plate veggies. Arrange Sole on top and garnish with za'atar sundried tomato mixture.
