Soothing Butternut & White Bean Soup
Gather ingredients

Chop onion & garlic

In a large saucepan, sauteé onion & garlic in olive oil

Peel & chop butternut squash
4
Add stock & squash to sauteèd onion

Add butterbeans and herbs to soup pot

Simmer until soft

Roughly mash soup to make creamy

In a frying pan, dry fry pumpkin & pine nuts. Remove from pan
9
In the same pan sauteé garlic with kale
10
Serve soup topped with kale, pine nuts and seeds
