Southern Pecan Cheddar Wafers
Southern Pecan Cheddar Wafers are an elegant version of the cheese straw and are fabulous with cocktails.
Cream 1 cup soft butter with 2 1/2 cups cheddar and a pinch of cayenne to create a soft dough. To this dough, add 2 cups of flour in 3 parts.

As if the dough were not already stiff enough, add 2 1/2 cups crisped rice cereal. You’ll have to knead it in. Shape into two logs, wrap, and chill.

Once chilled, unwrap onto a clean work surface. Line a baking sheet with parchment and preheat the oven to 350 degrees.

Using a bench scraper to slice 1/4” rounds works best. Reshape them as needed and place onto the baking sheet along with a single pecan half on each.

Bake for 15 minutes before removing to a wire rack to cool.

Serve with a well chilled white wine or a dry, earthy red. These savory wafers beg to be eaten.
