Southern Smothered Pork Chops
Whisk together salt, paprika, black pepper, garlic powder, and onion powder. Sprinkle mixture over both sides of each pork chop.
Set aside flour from other flour to thicken gravy. Spread out remaining flour on a plate. Coat each side of the pork chop in a layer of the flour.
Place a skillet over medium heat. Add vegetable oil. Once hot, brown pork chops until golden, about 5 mins. per side. Remove pork chops to a plate.
Add yellow onion. Cook until caramelized. Stir in garlic. Push onion and garlic to side of pan. Add butter and once it melts, mix in remaining flour.
Pour in broth. Then mix with onions and garlic. Bring the broth to boil, then reduce to medium-low until it starts to thicken.
Reduce heat to low and whisk in buttermilk and water. Nestle back in pork chops, cover, & simmer over low heat until tender.
Remove skillet from heat, adjust seasonings as needed, and serve the pork chops warm with the pork chop gravy and a light sprinkling of fresh parsley.
