Spaghetti Carbonara No Cream
A simple light carbonara made with eggs & cheese - no cream

Gather your indredients

Put your spaghetti on to cook & mix together the eggs & Parmesan cheese in a bowl

Melt the butter in a large frying pan & add the garlic

Add the bacon or leftover gammon & fry for 2 minutes

Put the broccoli on to steam for 4 -5 minutes

Keep the heat low. When the pasta is cooked scope out a little pasta water

Remove the garlic. Drain the pasta & add the spaghetti to the pan. Toss together to coat in the butter.

Remove from the heat. Add the egg mixture & quickly toss together

Loosen with a little pasta water & toss together for a few more seconds

Serve immediately with the broccoli, black pepper & sprinkling of Parmesan
