Spanish Roasted Potatoes
Slice the fingerling potatoes in half lengthwise and place in a mixing bowl.

Slice 1/4 of a yellow, red and orange bell pepper and add to the mixing bowl.

Slice 1/4 of a red onion in 1/4 inch slices and add to the mixing bowl.

Drizzle with 1 teaspoon avocado oil and 1/2 teaspoon salt.

Add 1/2 teaspoon smoked paprika and 1 teaspoon oregano and toss to combine.

Place directly on a cookie sheet and spread out evenly. Roast at 400 for 20 minutes.
