Spicy Vegetable Pie Ingredients
Peel & chop 2 large sweet potatoes

Add your sweet potatoes to a saucepan and season with a little salt

Season with a little pepper also

Add water and bring to a boil

Whilst your sweet potatoes cook, heat a pan with 2 tablespoons of extra virgin olive oil

Add one large diced white onion

Add 3 cloves of chopped or crushed garlic

Fry on a medium heat until lightly browned

Add 2 large chopped carrots

Stir to incorporate the ingredients

Add 1 tablespoon of tomato paste

Add 1 teaspoon of paprika

Add 1/4 teaspoon of red chilli flakes

Add 1 teaspoon of coriander

Add 1 tin of drained green lentils (240g)

Add 1 tin of drained kidney beans (240g)

Add 1 tin of chopped tomatoes (400g)

Evenly your mixture to a large casserole dish

drain your sweet potato

Scoop out your sweet potato mash and spread on top of your mixture

Use a fork to evenly spread

Bake in your preheated oven for 15-20 mins or until lightly browned
