Add cumin seeds to the hot oil.
Add cloves and sauté for few seconds
Add grated ginger and chopped garlic
Add fresh ground spices
Sauté until raw smell fades away
Add washed baby spinach
Add a little water and cover with lid
Lentils are cooked and ready to add
Pour the lentils and stir well
Cook for another 2 minutes
Add lemon juice and switch off the heat
At the end, add tadka or tempering.
