Spinach Mushroom Breakfast Casserole

Eggs
1 cup, diced
Onion
Buy
8 ounces
White Mushrooms
3 Tablespoons
Butter
5 ounces
Fresh Spinach
1½ cups
Shredded cheddar Cheese
1½ cup
Half & Half
Salt & Pepper
Sauté mushrooms and onion in butter for 4-5 minutes then add spinach and cook until wilted

Add the veggies and cheese to a baking dish

Whisk together eggs, half and half, salt and pepper then pour over the vegetable mixture. Top with remaining cheese.

Bake at 350ºF oven for 30 to 35 minutes until set. Let cool for 10 minutes before serving.
