Spinach with Stewed Tomatoes & Onion
Add sliced garlic and tomato juice
Add spinach by the handful and stir with tongs. Repeat until it’s just wilted.
Add can of stewed tomatoes and stir.
Cook 5 minutes. Optional: add dill and fresh lemon juice.
Ready in 15-20 minutes. Serve over rice, pasta or with bread. Delicious with chickpeas or lentils added, too!
