Prepare your ingredients before you begin.
Melt 1 T butter on med heat. Add 1 shallot, 2 cloves garlic, 2 carrots, salt & pepper. Cook 2-3 min.
Add 8 C chicken stock, 16oz split peas, 2 C ham & sachet of 1 bay leaf, 1/2 t thyme, 1/2 t pepper.
Bring to boil, then simmer 1+ hours. Remove ham. Add 1 C potatoes. Cook 20-30 min or until tender.
Dice the ham and return to the pot. Remove the sachet and discard. Heat until warmed through.
