Spring Funfetti Cheesecake In Quick Cooker
Quick Cooker & Springform Pan for Quick Cooker & Rack

Ingredients: Graham Cracker Crumbs, Melted Butter, Granulated Sugar, Cream Cheese, Sour Cream, Eggs, Vanilla Extract & Rainbow Jimmies

Mix your graham cracker crumbs, melted butter & sugar together. Put into greased springform pan & press into bottom. Chill for 15 minutes.

Beat room temperature cream cheese until light & fluffy. Add sugar & mix till combined & then add sour cream & vanilla & mix well.

Mix in eggs gently with classic scraper & do not mix too much.

Add jimmies & fold in gently. Do not over mix.

Pour batter on top of crust.

Place rack in bottom of Quick Cooker & add 1 cup of water.

Cover Springform Pan tightly with foil & place on rack.

Lower Springform Pan into Quick Cooker.

Close & set cooker to dessert setting & press start.

Quick Cooker will build steam & seal with programmed pressure & cook for 40 minutes. Once done allow for natural steam release for 10 minutes.

Remove cheesecake & foil. Cool completely on the counter. Middle will be slightly jiggly. Place in refrigerator overnight.

Gently remove outer ring from Springform Pan. Place cheesecake on serving platter.

Prepare Whipped Cream using heavy whipping cream, sugar & vanilla.
