Star Fruit (Carambola) Chutney
A little sweet and tangy with a big kick of spice. Serve it with curries, fish, chicken, or pork. Heck, it’s even a great snack or appetizer.
You will need: 4 C star fruit, 1/4 C pickled jalapeño, 1/4 C red wine, 1 red pepper, 1 1/2 inch ginger, 1/2 C onion, 3 TBL roasted garlic....
.....2 TBLS pomegranate molasses, 1 TSP salt, and 1 TBL avocado oil. Peel the hard edges off the star fruit.
Slice the fruit, remove any seeds, and dice into small pieces.
Dice the onion, red pepper, and jalapeño. Grate the ginger.
Heat the oil in a medium sauce pan over medium heat. Add the fruit, peppers, onion, and jalapeño. Cook until onion is translucent.
Add the red wine, molasses, roasted garlic, ginger, and and salt to the pan, and continue to cook until the star fruit is soft and easy to mash.
Mash into small bits, and continue to cook until excess liquid has cooked off, about 10 more minutes.
Store in an airtight container in the fridge for up to a week. You can also freeze extra portions.
