Sticky Toffee Bundt Cake
Combine dates and water in saucepan and bring to a boil.

Mash cooked date mixture until no large pieces remain. Let cool before proceeding.

Add softened butter and sugar to bowl.

Cream together at medium speed until light.

Add eggs one at a time, mixing well between additions.

Scrape down bowl well.

Add vanilla and mix in.

Add flour mixture and mix in well.

Add cooled dates and mix in.

Add batter to well-greased bundt pan and bake.

For toffee sauce: melt butter in saucepan.

Add white sugar.

Cook whisking until sugar dissolves.

Continue cooking stirring regularly.

Mixture will lighten in colour and become granular in texture.

Continue cooking and stirring regularly. Mixture may split.

As you continue cooking the mixture will start to colour.

Cook until mixture is a golden colour.

Carefully add cream *stand well back when you add!

Stir vigorously to remelt sugar.

Continue cooking about 3 minutes, until thickened. Remove from heat and add brandy or vanilla.
