Stracciatella Gelato
Place cream and milk in a saucepan over medium heat. Cook until hot, about 5 minutes.

Add vanilla bean paste or vanilla to the hot cream and let steep.

Cream together egg yolks with sugar.

The mixture should be a pale yellow color.

Temper the eggs by adding 1 cup hot cream and whisk. Then add the rest of the cream.

Add 1/4 teaspoon salt.

Place a layer of Saran Wrap directly on the gelato and refrigerate for at least 6 hours or overnight

Place the gelato mixture into a frozen ice cream machine. Make sure to get all the left over vanilla

Turn the machine on for 15 minutes.

Chop dark or milk chocolate into fine pieces.

Place chopped chocolate into a microwave safe bowl and microwave in 30 second intervals until melted

When gelato is ready drizzle melted chocolate while the machine is running into the gelato.

You can also add chocolate shavings into the gelato and on top.
