Strawberry Rhubarb Lemon Ricotta Baked French Toast
Mix the ricotta with the lemon curd and a pinch of salt

Until smooth and fully combined

Whisk the eggs, maple syrup, vanilla, milk and pinch of cinnamon

Until fully combined

Place half the sliced bread in a greased casserole dish

Slather on the lemon curd and ricotta over bread evenly

Then layer with all the fruit

Top with remaining bread

Gently press it down

Pour custard evenly over it

Cover and chill in the refrigerator for at least 4 hours or overnight then when ready sprinkle with sugar & bake

Until golden and crisp on the top

Serve with whipped cream, fresh berries, sliced almonds, powdered sugar and Maple syrup
