Crust graham cracker until a fine crumb, add in cinnamon, ginger, and melted butter

Firmly press your mixture into the bottom of a springform pan

Bake for 10 minutes on 325Β°F while you make the filling

Using a hand mixer, beat cream cheese until smooth. Add in sugar and vanilla and beat again

Add in 2 eggs and 1 egg yolk and beat until mixed well

Add in sour cream, salt, lemon and zest. Beat well until smooth

Pour half of the cheesecake mixture over the crust

Dollop small blobs of strawberry sauce over the cheesecake mixture

Carefully spoon over the remaining cheesecake mixture

Add more blobs of strawberry sauce, use a knife to give a swirl effect

Bake for 45 mins. Turn oven off and let cheesecake cool inside for 30 mins. After 30 mins let cool in room temperature for 40 mins.

Let it set in the fridge for 4 hours. Remove from pan and enjoy!
