Stuffed Baby Pumpkins And Spaghetti Squash
What you'll need
2 lbs
Ground beef
Finely diced
1 Onion
2 Minced
Garlic Cloves
A bunch
Chopped Parsley
Half a bunch
Chopped Coriander
A cup
Chopped Walnuts
Salt And Pepper To Taste
2 Baby Pumpkins & 1 Speghetti Squash
Pomegranate Seeds For Topping
Wash them & take off the top. Cover each with aluminum foil & in the oven for 15min -350’F
Sauté your onion and garlic, then put in your ground beef. Add salt & pepper, about 1.5 tsp each
When the meats fully cooked add the parsley, coriander and dill
Stir on and off for another 5 minutes then turn off your stove & put in your walnuts. Leave to cool
After taking them out of the oven, remove all the seeds and clean the inside.
Fill each one to the top. Firmly pressing continuously.
Cover each with aluminum foil again and bake them in the oven for about 60-75 min at 375’F
Top it off with pomegranate seeds. Tzatziki sauce on the side also compliments this dish very well!
