Stuffed Zucchini Blossoms (Greekstyle)

Heat butter and olive oil in medium saucepan

Add onion & garlic & sauté until onion is softened & translucent (can add 1/2 lb of ground meat too)

Add chopped tomatoes and lemon zest

Then the rice and herbs

Stir well and add the broth

Bring to a simmer then lower the heat, cover and cook until rice is tender

Once done stir in the cheese and nuts & remove from heat and allow to cool before stuffing blossoms

After gently washing the blossoms remove stems from them

Then remove the stamen from each

Stuff each with 2-3 teaspoons and twist the petals closed or gather them and tuck them under

Drizzle with olive oil and bake for 15/20 minutes

Serve with lemon slices and sprinkled with fresh chopped parsley
