Make the mint basil pesto: combine mint, basil, nuts, cheese, garlic, lemon juice, salt & pepper.

Slowly stream in olive oil while pulsing, until mixture is smooth

Add more olive oil if pesto is too thick. Set aside.

Evenly spread arugula on large platter. Top with chunks of melon & Gorgonzola cheese crumbles.

Add prosciutto.

Drop spoonfuls of mint-basil pesto on top of salad. Garnish with fresh basil/mint (optional)
