Super Crispy Roasted Kipfler Potatoes
Add 1kg of whole Kipfler potatoes to a pot of well salted water on high heat. Cook for 15-20 mins
or until they are completely cooked. Preheat oven to 200C/400F. Allow potatoes to steam dry
Once they’re cool enough to handle, slice them so they have flat surfaces for better surface contact
When the oven is hot, place a tray with a shallow layer of oil in to preheat for 10-15 mins
Add the potatoes to the hot oil. Quickly spread them out and douse all sides in the hot oil
Cook for 20 mins, toss and repeat. Finish with grill to brown. Sprinkle with good salt while hot
Serve immediately - potatoes wait for nobody!
