Honey
1/2 cup
Balsamic Vinegar
1/4 cup
Sesame Seed Oil
About 2 Tbsp
Fresh Cilantro
1 inch
Fresh Ginger Root
To taste
Himalayan Salt
To taste
Pepper
1 Tbsp
Extra Virgin Olive Oil
Cut one sweet potato into 1/2 in squares.

Add to a baking tray lined with parchment paper.

Brush extra virgin olive oil into sweet potatoes and add salt and pepper.

Bake for 30 min at 350F.

In the meantime cut one mango into squares as well.

And cook the cauliflower rice adding some salt and pepper to taste.

Add 1/2 cup balsamic vinegar, 1/4 cup sesame oil, 1 inch ginger root, 2 Tbsp honey, 2 Tbsp cilantro

Blend together until smooth.

Slice or cut into squares 1/2 large avocado.

Add all ingredients into a bowl.

Top with the honey, cilantro and ginger dressing and enjoy!
