Suppertime Skillet Creamy Corn
Suppertime Skillet Creamy Corn is an unexpectedly delicious side dish for “all things grilled!”
Creamy and sweet but with just the right amount of salt and tang, this creamy skillet corn owes its awesomeness to queso fresco and a hint of lemon.
Begin with butter, lemon zest, and a roughly chopped onion, sautéing until tender and fragrant.
Add the corn and some salt and pepper. I’m using frozen here, but smoked or grilled fresh ears can easily take this recipe up a notch!
Add sour cream, crumbled queso fresco and green onions. Then transfer 3/4 of the corn mixture to a food processor and pulse until creamy.
Return to the pan and the portion left whole. Gently warm and stir. Add additional sour cream, more queso fresco and more green onions.
Keep the creamy corn warm while you prepare your grilled foods. Tonight, my family is enjoying with grilled filet mignon and Potatoes Bravas.
