Sweet & Salty Butterscotch Chip Cookies
Beat 2/3 cup each white and brown sugar, 1 cup butter, 1/2 tsp salt, 1 tsp baking soda, 2 tsp vanilla, 1 tsp vinegar and 3/4 tsp instant coffee

Add one egg and mix well to incorporate

Mix in 2 cups all purpose flour

Stir in 1 cup chopped toasted pecans and 1 1/3 cup butterscotch chips

Refrigerate the dough for at least two hours

Mix together 1/3 cup sugar and one heaped teaspoon salt

Make 2 tbsp sized balls of dough and roll them in the sugar mix

Bake at 375 F for 9-12 minutes
