To a large bowl add 3 tbs soy sauce

Add 1 tbs white wine vinegar

Add 2 tbs of siracha sauce (or more if you want an extra kick)

Add the juice of 1 lime

Add 3 crushed cloves of garlic

Add 3 chopped spring onions

Add 280g of extra firm tofu - drained, dried & cubed

Stir, cover and leave to marinate for 20-30 mins

Heat 2 tbs of extra virgin olive oil in a pan

Add the marinated tofu

Fry until the tofu is lightly browned 5-6 mins, turning mid way

Serve on a bed of whole grain rice (it makes 2 portions)
