Sweet Potato Breakfast Cookies

Mix quick oats, cinnamon and salt

Whisk almond butter, honey and vanilla

Stir in mashed sweet potato

Add the wet to the dry ingredients

Add cranberries and almonds and stir

Drop onto cookie sheet by 2.5 tbsp sized balls

Press out with damp hands

Sprinkle with coconut sugar

Bake at 325 degrees 20-25 minutes until set

Let cool on the pan completely and then devour!
