Sweet Potato Muffins w/ Crumb Topping
Sweet potatoes Flour Baking soda Cinnamon Salt Vanilla extract Eggs Maple syrup Coconut oil Brown sugar
Muffin tin Muffin liners Large mixing bowl 1 teaspoon, ½ teaspoon, 1 cup, ¼ cup and ½ cup. Mixing utensil Cooling rack
Add sweet potatoes to bowl and mash with a potato masher
Add flour, baking soda, cinnamon, salt & vanilla extract
Crack in eggs, pour in maple syrup & oil and mix everything together
Mix flour, brown sugar & coconut oil in a small bowl
Distribute batter throughout the muffin tin
Scatter crumb topping over the muffins and bake for 20-25 minutes at 350 degrees F
