Sweet Potato Quiche

Cut sweet potato into thin slices using a mandoline

Add olive oil, S&P, and oregano

Create your “crust” by overlapping slices one on top of the other

Do the same with the sides and fill any empty areas

Bake in the oven at 400F for 25-30 min. *partial bake*

Sauté onion, garlic, and spinach

Add salt and pepper

Add the spinach mixture on top of the baked sweet potato crust

Add eggs, milk, S&P, nutmeg, and organo. Whisk it up!

Top with cheese and bake at 375F for 35 min or until solid and bubbly on top.

Fresh out the oven!
