Tahini Macadamia Nut Cookies (Vegan)
Whisk together 1 flax egg (1 tbsp ground flaxseed & 3 tbsp water) in a bowl. Let sit for 5-10 mins.
Add in 1 1/4c almond flour, 1tsp baking powder, 1/2c maple syrup, & 1c tahini, stirring to combine.
Fold in 1/2c Hu Kitchen Gems and 1/2c chopped macadamia nuts.
Scoop 1 1/2 to 2 inch rolled balls onto parchment lined baking sheet.
Flatten slightly with your hands, then add more Gems on top of each cookie.
Bake at 350F for 12-14 mins, until slightly brown at edges. Cookies will firm up after cooling.
