Tasty & Healthy Vegan ‘meat’ Balls
Ingredients; 1 large aubergine - 3 garlic cloves - 1 onion - 2 flax eggs - nutritional yeast - breadcrumbs - parsley - Italian herbs
Start with sautéing the chopped onion and garlic in some olive oil
Add the peeled and diced aubergine, stir and cook on medium heat with the lid on until the aubergine is softened (approx. 15 minutes)
Prepare the other dry ingredients in a bowl. Don’t be shy on the amount of herbs!
Add the cooked and drained aubergine mixture and mix and kneed with your hands into a sticky but not wet mixture
Shape into small meatballs, place them on an oven tray, drizzle with a bit of olive oil, and bake 25 minutes on 180C / 360F (turn twice)
Serve them by themselves as a little snack, drizzled with some tomato sauce
Or serve them with your favourite pasta as a main meal
