Tequila Lime Tofu Cutlets
Gather the ingredients: extra firm tofu (frozen, thawed, pressed), avocado oil, lime juice+zest, bouillon, taco seasoning, tequila, + coconut sugar

Mix all the marinade ingredients in a large measuring cup.

Layer tofu cutlets in marinade...

...and let it marinate for at least 30 minutes or overnight. (You can also freeze them at this stage.)

Then, bake them at 350F for 40-50 minutes, flipping them halfway through...

...until they are crispy on the outside and tender on the inside.

Serve them on taco bowls or avocado pasta (as pictured). They’re also great for nachos!
