Teriyaki Pork Bowls
Peel & dice kiwi.

Dice tomato.

Peel & slice onion. Dice 2 tbsp.

Zest lime & quarter.

Combine kiwi, tomato & diced onion. Add lime juice, salt & pepper.

Peel & mince garlic.

Mix 2 tbsp sour cream, 1/2 lime zest, & pinch of garlic. Add 1 tsp water; season with salt & pepper.

Slice long green pepper crosswise.

Combine 1 tbsp butter & 1/2 cup rice in pot.

Add 1 cup broth in pot. Bring to boil.

Heat drizzle of oil in skillet. Add pepper & onion. Season with salt & pepper. Cook 6-7 minutes.

Lower heat to simmer on rice, cover & cook 15 mins.

Add remaining garlic; cook 30 seconds. Remove veggies from pan & set aside.

Add 10 oz ground pork to skillet. Season with salt & pepper.

Break up pork with Mix N Chop.

Once pork is cooked, add veggies, 1 tsp sugar & 8 tbsp teriyaki sauce.

Add 1 tbsp butter & cook until sauce is thickened.

To serve, add rice & pork mixture to bowl.
Top with kiwi salsa...
...& lime crema. Serve with lime wedge.
