Start with 1 block or drained extra form tofu

Crumble the tofu in a large bowl

Mix in spices. I used 1 Tbs chili powder, 1 tsp each salt, cumin and smoked paprika, 1/2 tsp pepper.

Cook 1/2 chopped onion and 2 minced garlic cloves in 1 tsp extra virgin olive oil until softened.

Add tofu mixture to onions and garlic. Raise temp to medium-high.

Cook until well-browned, turning frequently, about 10 minutes.

Top tortilla chips with tofu mixture and cheese and broil until cheese is melted.

Top with your choice of toppings, such as lettuce, tomato, avocado, salsa, and plain Greek yogurt.
