Texas-Style Queso

Shred 2 cups cheddar and 1 cup mild white cheese like jack or colby cheese. Toss with cornstarch.

Prep ingredients: white parts scallions, minced garlic, chopped tomato, diced pickled jalapeño.

Melt 1 tbsp butter and sauté scallion whites & garlic on low heat for 2 minutes

Add in the chopped tomato and pickled jalapeños. Stir and mix about 5 minutes.

Add one tbsp flour and cook for 1-2 minutes to remove raw taste.

Add milk (3/4 cup) and whisk until hot, not boiling. Optional: add chipotle en adobo/chili powder.

Take off heat. Stir in the two types of cheese until melted. Take off heat immediately, once melted.

Top with tomato and green scallion tops (cilantro if desired) and serve with chips. Enjoy!
