Tex-Mex Turkey Stuffed Poblanos
Add 3/4c water or broth to Rockcrok.

Add 1/2c Jasmine rice. Simmer until tender, 15-18 mins.

Halve & peel red onion. Thinly slice 1/4; dice remaining onion with Food Chopper.

Peel & mince garlic. Halve lime; quarter one half.

Place sliced onion in 1c prep bowl. Juice lime half into bowl. Add 1/4t sugar & season with salt.

Microwave sliced onion for 30 seconds.

Halve & de-seed 2 poblano peppers.

Drizzle peppers with oil & season with salt & pepper. Place cut side down on stone.

Roast peppers at 425° for 15-18 mins.

Heat drizzle of oil in skillet. Add diced onion & cook until softened.

Add 10oz ground turkey. Cook, breaking up into pieces using the Mix N Chop. Season with salt & pepper.

Add 1T Southwest spice.

Add 3T tomato paste, minced garlic & 1/3c chicken stock. Simmer until thickened, 1-2 mins.

Add 1T butter to rice & fluff.

Add rice to turkey mixture.

Stuff pepper halves with turkey mixture.

Top with shredded Mexican cheese. Return to oven until cheese melts.

Top peppers with pickled onions & sour cream. Serve with lime wedges.
