Baby Bok Choy
1 can (13.6 ozs)
1 Can coconut Milk
1 tbls
Turmeric (powder Or Finely Chopped)

Coconut Oil
1/2 cup
Fresh lime juice
1/2 Cup Water
1 tbls
Crushed Chili Flakes
For garnish

Cut up all your vegetables / spices so they’re ready to go!

After letting coconut oil melt in the pot, add the onions, celery and red peppers. Simmer for 2 mins

Add ginger, garlic and mushrooms. Simmer for 2 mins

Add cleaned and peeled shrimp. Cook for 2 mins.

Add water, scallions and turmeric

Add coconut milk. Stir. Let simmer for 10 mins

Stir the soup every few mins.

Add the bok choy. Simmer for five minutes.

Stir while it simmers.

Add chili flakes. I like about a tablespoon but use more / less depending on how spicy you’d like it

Add approx 1/2 cup of lime juice. Simmer and stir for 1 minute

Add salt and pepper to taste. Garnish with parsley and serve! Enjoy!
