Gather your healthy ingredients!

Peel, trim, & cut the carrots into pieces. Add to a bowl with some avocado oil.

Sprinkle with a hefty pinch of salt & roast in a hot oven on a cookie sheet.

Heat some avocado oil in a large soup pot and add the chopped onion & crushed garlic.

Cook until slightly fragrant and soft.

Next, add your vegetable stock...

Dried Kaffir Lime leaves...

And the lemongrass stalks.

Make sure to ‘bruise’ the lemongrass before adding to the pot!

Bring to a boil. Add the coconut milk & carrots. Simmer. Remove the kaffir lime leaves & lemon grass

Purée in batches until smooth & velvety!

Return to the soup the pot & add a squeeze of lime.

Simmer with a fresh cilantro bundle & season with salt.
