Cook Quinoa; fluff with fork and spread on a cookie sheet to cool.

Cut each squash in half and remove the seeds.

Add the oil, shallots, kale, and chipotle powder to a non-stick pan; season with salt and pepper.

Sauté until vegetables start to wilt; add the cranberries, pistachios, chopped apple, and cinnamon.

Toss in the orange zest and chopped parsley.

Fill the squash halves with the filling; dividing equally. Bake until heated through.
