Sauté bacon, onion, and garlic with oil in the Instant Pot. Cook and stir for 6-8 minutes. Add pepper, cayenne, and garlic powder. Cook for 2 minutes.

Secure lid & cook on manual high pressure for 25 minutes. It will take about 10 mins for the IP to come to pressure.

After cooking is finished, allow pressure to naturally release for 15 mins, then vent the remaining pressure. Remove bay leaves & stir in salt.

Using a potato masher, mash the peas until desired consistency is reached. Turn IP to sauté mode. Let simmer for 5 mins.

Ladle into bowls & garnish with freshly cracked pepper, drizzle of olive oil, and Tabasco to taste.
