The Best Homemade Cream of Mushroom Soup
Sauté onions in butter until softened. Add mushrooms, salt, and pepper, and cook until tender.

Stir in flour and cook for 1 min. Deglaze the pan with dry sherry and cook for an additional minute.

Stir in chicken or vegetable broth and fresh thyme. Bring to a boil, stirring. Simmer for 20 mins.

Transfer 1-1/2 cups of soup to a blender or food processor and puree until smooth.

Stir pureed soup back into the pot. Stir in heavy cream and season to taste with salt and pepper.
