The Best Lemon Blueberry Bread
Stir together blanched almond flour, tapioca flour (see notes), baking soda, salt and lemon zest.

In a separate bowl whisk together eggs, oil, lemon juice, extract and maple syrup or honey.

Stir in flour mixture into bowl of wet ingredients.

Fold in blueberries.

Pour batter into pan, top with blueberries and almond slices.

Bake for about 45 minutes, covering with foil halfway through baking time.
