The Best Soft Gingerbread Cookies
Cream butter and brown sugar together in a large bowl.
Add egg, molasses, vinegar and vanilla and mix just until combined.
In a separate bowl, combine flour, baking soda, salt and gingerbread spices.
Add dry to wet ingredients and combine into a cookie dough - do not overmix! Chill 3 hours.
Roll out on a lightly floured surface to 1/4 inch thickness.
Cut out cookies, place on lined baking sheet and bake.
Decorate and enjoy - but don’t forget to set one aside for Santa 🎅🏻
