THE BEST Vegan Vanilla Cupcakes
These delicious cupcakes are vegan and super easy to make! 🧁
Preheat your oven to 350 F

Add 1 tablespoon of apple cider vinegar to 1 1/2 cups of non dairy milk. Set aside for later

Add 2 cups of All-Purpose Flour

Add 1 cup of white sugar

Add 2 teaspoons of baking powder, 1/2 teaspoon of baking soda, and a pinch of salt

Whisk dry ingredients until fully combined

In a separate bowl, whisk together your non-dairy milk/ACV combination with 1/2 warmed/liquid coconut oil

Add 1 1/2 teaspoons of vanilla extract and fully mix your wet ingredients

Pour wet ingredients into your dry bowl

Mix until smooth

Pour your batter into a cupcake pan filled with liners

Bake for 15/20 minutes, or until fully cooked in the middle and golden-brown

While baking start making your icing

Combine 1/2 cup of vegan butter and a splash of vanilla extract. You’ll want to beat until light and fluffy

Slowly add 2 1/2-3 cups of sugar

While mixing in your powder sugar, slowly add 3-4 tablespoons of nondairy milk until your desired consistency is met

When finished, add into a piping/plastic bag and cut off the tip

After your cupcakes are finished, chill them in the fridge until no longer hot

Your last and final step is to pipe your icing and decorate!
