Cut a vanilla bean lengthwise, toss in a saucepan with 1 quart heavy cream & bring to a boil. Cool for 15 minutes.

In a bowl, whisk together 6 egg yolks, 1/2 cup sugar and 2 tsp. vanilla extract.

Gradually pour cream mixture into the egg yolk mixture. Then pour through a mesh strainer.

Divide into 6 ramekins. Put them in a deep pan and fill with hot water, so that they are halfway submerged.

Bake at 325° F for 40-45 minutes. Remove and refrigerate for 2 hours.

Using another 1/2 cup sugar, cover the tops of your ramekins & torch until caramelized & brown.
