Zest and juice 2 limes.

Cream 24 ounces of cream cheese, the lime juice, zest, 1.5 cups confectioners sugar and 1 teaspoon vanilla.

After chilling the bowl in the freezer, whip 3/4 cup heavy cream.

Fold in (use your best Moira Rose voice) the whipped cream.

Scoop into pie shells and chill for 6 hours. Serve with whipped cream, if desired.
