Thyme To Make Mushroom Matzah Brei
Chop 1-2 pounds of Bella mushrooms.

Add them to a pan.

Put in 10 sprigs of fresh thyme and cook on a high heat for the water to evaporate out, stirring frequently.

Meanwhile, crush up a box of matzah.

Pour a cup of boiling water over the matzah and cover with a lid for 5-10 minutes.

Beat together 5 eggs.

Once the matzah is soft, mix in the mushrooms. Once cooked, add in egg scramble and mix again. Add salt and pepper and tarragon.

Add the mixture to a deep saucepan. Cook on medium heat for 15 minutes.

Flip Brei over and cook another 15 minutes, covered so the steam gets trapped and moistens the Brei.
