Toasted Orzo with Shrimp
Let’s get cooking!

Gather your ingredients.

Heat skillet on medium high heat for 2-3 minutes with 1 tbs. oil

Add 1 tbs. lemon pepper rub/seasoning to 1 lb. of shrimp and toss to coat

Add shrimp to hot skillet and cook for 2-3 minutes per side

Remove shrimp from the pan and set aside

Add 1 tbs. salted butter to the skillet and let melt

Add 1 small onion (finely chopped) and 2 cloves of pressed garlic and let cook 2-3 minutes

Add 1 cup orzo

Stir constantly until toasted or lightly browned

Add 1 3/4 cup chicken broth

Add 1/2 cup frozen peas and simmer until broth is absorbed

Squeeze in the juice of 1 lemon

Grate in 1 Oz of Parmesan cheese

Add shrimp back to pan and heat through.

Add a little more Parmesan cheese and enjoy!
