Thai Hot & Sour at its best - did you know ‘Tom’ refers to the boiling process, & ‘yum’ means mixed
Slightly crush: Thai chilies, garlic cloves, kaffir leaves, lemongrass stalks & ginger

Heat coconut oil. Sauté the spice mixture you just crushed up for a couple of mins

Now add in chicken stock / broth & coconut milk can. Stir and bring to a boil. Then leave on simmer

Add in sliced mushrooms & tomato wedges. Stir and leave on simmer a few mins

Add in prawns & cook till done (won’t take longer than a few mins)

Add in fish sauce, Tom yum paste (if you have, otherwise skip) & brown sugar. Stir it all well

Squeeze in lime juice.Stir & check taste. Remove hard lemongrass & kaffir leaves before serving

Garnish with basil leaves. Tom Yum tiyaar hai
