Sprinkle grated cheese over the bottom.

Arrange sliced tomatoes in a single layer

Sprinkle with salt and Herbs de Provence.

Repeat with two more layers of sliced tomatoes.

Add a last sprinkle of salt, Herbs de Provence and top with more grated cheese

Bake for 35-40 minutes, until the puff pastry is crisp and golden.
