Tortilla Chip Crusted Chicken With Queso
Preheat oven to 425 degrees. Set a wire rack inside a baking sheet and grease with nonstick spray.
Flatten chicken breasts with a mallet so that they are uniform in thickness, about 1/4".
Add crushed tortilla chips, flour, and beaten eggs to 3 shallow bowls.
Dredge chicken in flour mixture; dip in egg mixture, and dredge in crushed tortilla chips.
Bake the chicken for 18-20 minutes, until golden brown and cooked through.
Make Queso: Melt butter. Whisk in flour. Add milk and cook to thicken. Then stir in cheese.
Serve with a drizzle of spicy cheese sauce and a sprinkle of tomatoes, cilantro and red onion.
